Recipe for Broccoli, Cherry Tomatoes And Ham Omelet- Serves 2
Kitchen equipment needed:
1 small-sized bowl
A fork
Ingredients:
1 cup of steamed broccoli florets
1/2 cup of lean ham
1/2 cup of cherry tomatoes
Butter spray
2 large whole eggs
2 large egg whites
1/4 of milk
1/2 teaspoon of coarse black pepper
1/8 teaspoon of salt (Or you can skip the salt, if watching your sodium intake)
2 tablespoon of mixed grated cheese (or cheese of choice)
Taco Sauce or Ketchup (Optional)
Steps:
- Preheat the oven to 500 degrees.
- Cut up the cherry tomatoes, broccoli and ham, then set aside.
- In a small bowl, mix together the eggs, milk, pepper and salt using a fork.
- Liberally Spray the skillet with the butter spray. Don’t forget the edges of the pan too . Don’t turn on the stove top yet.
- Add the combined ingredients to the pan.
- Now turn on the stove top to medium high. Any higher may cause it to burn.
- Immediately sprinkle on the cherry tomatoes, broccoli and ham. Use the fork to make sure everything is laying evenly.
- Just before placing in oven, sprinkle on the cheese. At around 9 minutes.
- Let the egg cook right through till there is almost no movement. About 10-11 minutes. The top of it will cook in the oven.
- Transfer to heated oven.
- Let set, until lightly browned for about 5 minutes in the oven.
- Take out and immediately transfer to a plate. Let cool a bit.
- Top with a touch of taco sauce or ketchup and Enjoy!
