Recipe for Simple Pumpkin Muffins
Kitchen equipment needed:
Measuring cups
2 Medium sized bowl
A large spoon
Can opener
Ingredients:
1 16-ounce can of pumpkin puree
1/2 cup of canola oil
2/3 cup of sugar
Butter spray
2 large room temperature eggs
1 teaspoon of vanilla extract
1/2 teaspoon of ground ginger
1/2 teaspoon of salt
1 1/2 teaspoon of baking soda
1 1/2 cup of white whole-wheat flour
1/4 teaspoon of ground nutmeg
1/4 teaspoon of ground allspice
Steps:
- Preheat oven to 350 degrees.
- Combine the flour, salt, baking soda, ground ginger, ground allspice and ground nutmeg in one mixing bowl and set aside. (The dry ingredients)
- Combine the pumpkin puree, oil, sugar, and vanilla extract in the other bowl. Mix well.
- Add the combined dry ingredients and mix well.
- Spray the muffin pan with the butter spray. (Spray liberally)
- Divide evenly into the muffin cups and place in the oven.
- Bake until browned, 27-30 minutes.
- Let cool and Enjoy!
Simple Pumpkin Muffins
These were so light and lovely. They are not sweet and make such a delicious compliment to a cup of coffee or tea. Yum! Plus as a bonus my husband and kids loved them! My two older girls had two each when I last made them! Hope you try it and enjoy them like we did.
