It can be difficult getting the little ones to eat up all their veggies. But I have found a way to get loads of it in there, if necessary, where they still clean their plates! Here is an easy healthy recipe for kids, Veggie Filled Spaghetti And Meat Sauce.
Most kids like simple dishes, making spaghetti usually a big hit. So why not get those veggies in their favorite meal, in a way that both you and the kids are happy in the end! For my kids, though, anything that doesn’t look like pasta, meat and meat sauce on that plate and being called spaghetti, is not going to go down well! They would eat vegetables separately when they’re ready, but not nearly as much as I would like. But they do love spaghetti! Bingo!
You can use you favorite spaghetti recipe of course and just add some blended veggies. But I am going to detail out what I use.
Note: I used a lot of red and orange veggies to combat all the greens.
Recipe
4 packed cups of baby spinach and kale mix (or greens of your choice | 2 tsp olive oil |
1 large red bell pepper | garlic powder |
3 Roma tomatoes | 1 8oz can of four cheese pasta sauce |
3 sweet mini peppers | 1 pound of ground turkey (or beef) |
1 large carrot | 1 16oz box of spaghetti |
1 medium onion | 4 1/4 cups of water |
dried oregano leaves | Grated Parmesan (optional) |

Chop and mince onions.

On High, cook onion in 1 tsp of oil.

Add ground meat before the onions caramelize. Soon after add 1tsp olive oil and 1\4 cup of water. Stir. Add 3\4 tsp oregano leaves, 1\2 tsp of salt, 1\2 tsp pepper and 1\2 tsp garlic powder.

Warning! you are going to be intimidated by how green this looks if your kids have an aversion to green foods!…but fear not, it will be ok.

Turn heat to medium high or little lower depending on gas vs electric. Add the can of pasta sauce and half of the liquefied veggies. Stir. Be brave and add all the rest. Stir. From here on be mindful to stir often enough. Because of the thickness, it would burn easily.

Add raw broken spaghetti. Stir.

Leave to simmer on low to medium heat for about five minutes.
8.
Check and stir. By now the spaghetti will be more on the red side.
9.
After about five more minutes leave to cool. Any remaining liquid will dry out and the noodles would be surprisingly firm.
Serve with your favorite cheese on top!
